Crockpot Pizza Chicken Melt

Ingredients:
1.25 pounds boneless chicken breasts
1 (15 oz) tomato sauce
1 (6 oz) tomato paste
1 tbsp oregano
1/2 tsp garlic powder
1 tsp paprika
1 tbsp Italian seasoning

Instructions
 
1. Place all of the ingredients in for the pizza in the crockpot.
2. Cover and cook for 4 hours on high heat or 8 hours on low heat.
3. After cooking, remove chicken from the crockpot and shred with two forks. Place chicken back into the crockpot, and gently stir to combine chicken with pizza sauce.

Shakeology Ball Recipe!


Chocolate Chip Shakeology Balls
 
Ingredients
1 cup oat flour
1/4 cup Vanilla Shakeology
1/4 tsp salt
2-4 tbsp sweetener of choice 
2 tbsp peanut butter
1/2 tsp vanilla extract
4 tbsp unsweetened apple sauce (or more/less depending on the consistency)
2-4 tbsp unsweetened chocolate chips
 
 
Instructions
  1. In a medium bowl, mix together all the dry ingredients. Add wet ingredients adding the applesauce last, one tablespoon at a time until the mixture just comes together like cookie dough.  (You may need a little more than what the recipe calls for, or a little less. You only want to add just enough until it comes together, not enough that it is sticky or too wet.)
  2. Add chocolate chips if desired, and roll dough into 10 balls.
Place balls on a plate or in a Tupperware, cover, and place in fridge or freezer. These calls stay good in fridge for up to 10 days, or in a freezer for up to 3 months.

Healthy Cheeseburger Casserole

Ingredients
1 head Cauliflower (or about 6 cup florets)
1.25 Extra lean ground turkey (or beef)

Sauce:
Plain low fat Greek yogurt
2 tbsp. Mustard (yellow or Dijon)
2 tbsp. tomato paste
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder
1/4 cup Parmesan Cheese (I substituted with Garlic & Herb Bread Crumbs)
1/2 Cup low fat shredded cheese

Topping:
1 cup low fat shredded cheese
2-4 slices cooked, turkey bacon

Instructions
1. Preheat oven to 425 degrees. Spray a large baking dish with cooking spray and set aside.
 
2. Prepare Cauliflower:
 
Wash cauliflower and cut into bite size pieces. Place cauliflower into a large pot, add 2 cups of water, cover, and bring to a boil over high heat. Reduce head to medium and cook for 5-8 minutes or until cauliflower is tender to fork. Drain cauliflower in a colander and place into a large bowl.
 
3. Prepare ground turkey:
 
In a large skilled sprayed with cooking oil, cook ground turkey over medium heat, breaking it up as it cooks. Cook until turkey is browned, and is cooked through.
 
4. Prepare Casserole:
 
Mix ingredients for sauce together in a small bowl. Add sauce and cooked ground turkey to cauliflower, and stir until well combined. Pour into baking dish. Sprinkle topping over cauliflower.
 
5. Bake for 25-30 minutes or until cheese is melted on top. Serve warm or refrigerate up to 5 days.

Buffalo Chicken Meatballs!

oh y'all. this crazy life of mine has got to calm down sooner or later right! 
I feel like life has been non-stop. But then again, I CAN'T complain! 
When life is busy, life is GOOD!!

Well, I FINALLY have a few seconds to type up this recipe for you guys so you can start making these delicious creations!

Ingredients:
1.25 lean ground chicken
1 large egg
3/4 cup Italian Breadcrumbs
1/4 tsp salt (optional)
1/4 tsp pepper (optional)
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp dried parsley
1 1/2 cup buffalo sauce

Instructions
  1. In a medium bowl, combine ground meat, egg, breadcrumbs (or oats), and seasonings. Roll the meat mixture into 14 balls (about the size of a golf ball, or about 2 tbsp each) -- or put into mini muffin tin! 
  2. Preheat oven to 400 degrees. Place meatballs in oven for 30 minutes or until they pass the clean toothpick test!

One Pan Bake Pizza

Ingredients:
1.25# ground turkey
1/2 tsp dried oregano
1/2 tstp dried basil
1/4 tsp garlic powder
1 15 oz can tomato sauce, no sodium added
2 cups water
12 turkey pepperoni (1/4 cut)
2 cup eggless noodles
3/4 cup low fat, Mozzarella cheese
1/8 c Parmesan cheese

Instructions
  1. Preheat oven to broil.
  2. Spray oven-proof skillet with cooking spray and heat over medium high heat. Add ground meat and seasonings, stirring and breaking up the meat as it cooks.
  3. Cook ~3-5 minutes, or until meat is brown. Cut up 8 pepperoni and stir into meat mixture until heated through.
  4. Add the tomato sauce, water, and pasta to the pan with meat, and stir to combine.
  5. Bring to a boil; cover, reduce heat & simmer over medium low heat until pasta is cooked through and sauce thickens -- about 8-10 minutes.
  6. Turn off heat and stir in Parmesan cheese.
  7. Top with Mozzarella and add the remaining turkey pepperoni.
  8. Place under ovens broiler for about 8-12 minutes or until cheese starts to melt.

Taco Chicken Quinoa Bowl

As requested by my challenge group, here is my spin off of the Taco Chicken Quinoa Bowl!!
It is ABOSLUTLEY AMAZING!
 
 
Ingredients:
1 Cup uncooked quinoa
1 Cup corn
1 15 oz can black beans, rinsed and drained
1 16 oz salsa
1 1/2 Cup chicken broth, low sodium
1 tsp garlic powder
2 tsp chili powder
1 tsp ground cumin
1.25# boneless chicken breast
1 cup low fat cheese
 
Instructions
  1. Preheat oven to 400 degrees.
  2. Spray 9X13 baking dish with cooking spray.
  3. In a medium bowl mix quinoa, 1/4 jar salsa, chicken broth, corn, beans, and seasonings together.
  4. Pour into baking dish.
  5. top with chicken breasts and the rest of the salsa over the chicken.
  6. Cover baking dish with foil and bake for 30 minutes, then remove the foil and sprinkle cheese over the top, baking for an additional 15 minutes or until cheese is melted.

Shakeology Candy

Yes. You read that title right. And yes. The caption on the picture is CORRECT. These suckers are 21 Day Fix approved. And AMAZINGGG!!
 
And guess what else. As if It couldn't get any better than that.
There's only 2 ingredients in these bad boys.
 
 
3 Tbsp Coconut Oil
1/2 - 1 Scoop Vanilla or Chocolate Shakeology (or combined vanilla/chocolate)
 
 
and guess what. It gets better again...
 
Step 1. Put Coconut oil is microwave safe bowl.
Step 2: Put Coconut oil in microwave and heat in 10 second intervals till it is liquid (NOT HOT)
Step 3: Mix liquid Coconut oil and Shaekology in bowl with a fork.
Step 4: Pour in mold and put in freezer! (Took max 20 minutes to harden for me)
 
And finally, enjoy them!!! :)
