Ingredients:
1.25# ground turkey
1/2 tsp dried oregano
1/2 tstp dried basil
1/4 tsp garlic powder
1 15 oz can tomato sauce, no sodium added
2 cups water
12 turkey pepperoni (1/4 cut)
2 cup eggless noodles
3/4 cup low fat, Mozzarella cheese
1/8 c Parmesan cheese
Instructions
- Preheat oven to broil.
- Spray oven-proof skillet with cooking spray and heat over medium high heat. Add ground meat and seasonings, stirring and breaking up the meat as it cooks.
- Cook ~3-5 minutes, or until meat is brown. Cut up 8 pepperoni and stir into meat mixture until heated through.
- Add the tomato sauce, water, and pasta to the pan with meat, and stir to combine.
- Bring to a boil; cover, reduce heat & simmer over medium low heat until pasta is cooked through and sauce thickens -- about 8-10 minutes.
- Turn off heat and stir in Parmesan cheese.
- Top with Mozzarella and add the remaining turkey pepperoni.
- Place under ovens broiler for about 8-12 minutes or until cheese starts to melt.
