Buffalo Chicken Meatballs!

oh y'all. this crazy life of mine has got to calm down sooner or later right! 
I feel like life has been non-stop. But then again, I CAN'T complain! 
When life is busy, life is GOOD!!

Well, I FINALLY have a few seconds to type up this recipe for you guys so you can start making these delicious creations!

1.25 lean ground chicken
1 large egg
3/4 cup Italian Breadcrumbs
1/4 tsp salt (optional)
1/4 tsp pepper (optional)
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp dried parsley
1 1/2 cup buffalo sauce

  1. In a medium bowl, combine ground meat, egg, breadcrumbs (or oats), and seasonings. Roll the meat mixture into 14 balls (about the size of a golf ball, or about 2 tbsp each) -- or put into mini muffin tin! 
  2. Preheat oven to 400 degrees. Place meatballs in oven for 30 minutes or until they pass the clean toothpick test!


  1. Recipe looks great! Do you have the containers listed somewhere?

  2. Same question for me - what containers do I count for this? I'm guessing 1 red, .5 yellow (or 1), and maybe 1 teaspoon? I'm not sure what the buffalo sauce would count as.

    1. I would do 1 red and 1/2 yellow. Buffalo sauce is a freebie! (Just be careful of sodium). :) Tina

  3. This may be a dumb question but when do you add the buffalo sauce??

  5. Is the amount of ground chicken 1.25 pounds? I'm assuming yes, but want to be sure.
