Spicy Sriracha Tuna Sandwich


This week my team is hosting a 5 day clean eating group, so my meals are based around that! This is what I had for lunch yesterday, and guess what. It was SO good, I have it again today ;)
It literally took me about 10 minutes to throw together. I did put a few slices of tomato on it to make sure I get some extra veggies cause this girl hates veggies!
So here's the recipe for you guys!

1 packet tuna fish (i like sweet n spicy)
2 tbsp Sriracha sauce
1 tbsp LIGHT mayo
1 tbsp sweet relish

AND THAT'S IT!! <3

All you have to do is mix everything together and slap it on an wrap, muffin, flatbread, etc! I used a high fiber English muffin!

Chicken Nachos & Chicken Taco Salad



Last week, this was my lunch! Yepp. You read that right,  tacos salad and nachos on the 21 Day Fix. Say whattttt! Good thing, my container system loves me as much as I love it!

To make the chicken, I put skinless, boneless chicken strips in the crockpot with 1 cup low sodium chicken broth and low sodium taco seasoning over night and VOILA! The "chips" is 1 gluten free tostada that I crunched up to make chips! And I used low fat pepper-jack cheese for my nachos and low-fat cheddar cheese with my taco salad! 

It's that simple people! Eating healthy doesn't have to be hard, boring, and nasty! Be creative with your food & eat good food! <3

Life as of now

boy boy boy. I have sucked at this blogging thing! Life has been crazy over here and the last thing I've thought about was typing about it! lol! Well now that I FINALLY have a minute to share, here it goes! <3

Since the last time I've posted, I had my trip to Nashville for Team Beachbody's Coach Summit. Man oh man. That was a hot mess! I drove with another coach and at 1 AM on the way up, we had a tire blowout which ruined parts of my car. But that's going to be all saved for another day's post!

The week after Nashville really SUCKED as far as workouts go. I was still lagging from all the poopy foods I pigged out on on the trip!
 
But Zues is always such a big help when it comes to motivating me every morning at 5 AM ;)







Saturday was actually our 1 year wedding anniversary. So there goes a health Saturday for us! haha! I also went to Courtney's little one's birthday party so lunch was thrown off too! Cause this girl can't pass up homemade Rotel Dip! Supper Chris's parents treated us  to Outback for supper!



And Sunday I have a few of my closest and most favorite people all in one place and guess what we did. Yepp.. we CIZE'd it up!  CIZE videos are going to be shared on a different post though ;)
Now as far as this week goes, it's going absolutely well! 
Week 5 of P90X2 is going down like a bat outta hell!


The fur babies defintitely helped me at 5 AM cause without them, I would definitely stay in bed. The second their hear my alarm, i get smacked in the face by Zeus. So with that, I have no choice but to get up!

Nutrition this week!

 
This week, my meal plan is SIMPLE. Only because I'm leaving for Nashville on Tuesday night! We will be in Nashville for Beachbody's annual convention Wednesday to Sunday!
I'm not exactly excited about the 9 hour drive between us and Nashville, but I'm determined to make sure that the convention is worth my drive!
I am going to make sure I soak in every bit of information that I can. Purchase all kinds of new workout gear and workouts and pre workouts and all the gooooddss!!! <3 oh and how could I forget, meet the trainers who help me push play EVERY SINGLE DAY.
 
So with all that being said, this is going to be my lunch Monday and Tuesday.
 


Morning snacks will be 2 greens (cucumbers) & 1 red (buffalo chicken meatballs).
PM snack will be 1 yellow & 1 red (P90X bar).
 
And supper will be Mexican Egg Scramble because it's simple! I love simple. 

This weekend was interesting. I thought I was going home on Friday afternoon to relax and do ABSOLUTELY NOTHING all weekend long.  That idea quickly was stolen from me. The second I got home Chris told me to hurry and workout "if I wanted to get my workout done" because we were going watch our niece at her swimming invitational.   So Friday night was spent at a swimming pool cheering for our cutie pie
.
 
 

Saturday we woke up at  a decent time, and lounged around for the morning other than when I got my AM workout in (can't skip the best part of your day!) 
 
 
 
 
 
 
 
 
 
Then at 1:30ish, Chris told me we were going fishing. I SUCK at fishing, so I wasn't the most excited person in the world. Our neighbors have a small pond in front of their house, so we started there to get minnows and I actually caught 4! So I was pretty excited. Until we drove on the 4-wheeler for 30 minutes to get to "their spot" in the woods on this rickety ass bridge with bugs all over. NO, NOT COOL.


 

 
 
 
 
 
 
 
 
So, basically, they fished. I tanned. and sweated profusely. and was miserable. again, I will say it. I HATE FISHING (unless I'm on a boat with a cold drink in my hand--NOT in the darn woods)

Saturday night we ordered sushi for dinner and watched "The Lazarus Effect" like old people do. THAT'S what I call a good Saturday night.

 
 
And Sunday was a HOT mess! And by hot, I mean HOT. We were out at Ryli's swim meet from 10:30 AM to 6:30 PM! But it was all worth it! Our sweet princess got 1st overall and I'm so glad we were there to cheer her on!

Week 2 of Round 2 of P90X2

Lordy. That title sure sounds like a mouth full. Well folks, I'm back. I'm going to try to step up my blogging game to help not only you guys out, but also to help myself from going crazy with all this pent up extra words that are floating around in my brain 24/7.

Round 2 of X2. I don't even really know where to begin.
 
First off, I'll say this: this shit is HARDDDD.
And secondly: it's actually EASIER than the first time.
 
Since the last time I've done P90X2, I've completed INSANITY MAX:30 two times, Max: 30/21 Day Fix Extreme Hybrid, 2 months Body Beast, and 1 Round of 21 Day Fix Extreme.
 
I KNOW I have gotten stronger. I still feel like I look the exact same, but some of the moves come easier. And this round, I'm trying my utmost NOT to modify if I don't absolutely have to. I want to go full out! (except pull ups-- my assist band isn't going anywhere!!)
 
So all in all week two was a success in my opinion. I ate one meal out of whack on Monday, but other than that, I have stuck to my meal plan and not cheated. Christopher and I have been so bad about cheat meal lately it's pathetic. It's time to stop that bologna!
