Cheesy Chicken & Green Chili Lasagne


Man oh man! Let me tell you, this recipe is worth the cheesy look that it gives off. It's is absolutely amazing! 

It was EASY to make, didn't take a lot of time, and it was even husband approved!! When he went back for seconds, I knew it was a huge hit! 

Next time, I'm going to make sure I drain the chicken juice prior to adding to the cheese mixture. It made it a little juicy, which in turn made the tortillas super soft! But other than that mishap, this recipe was AMAZING!

Ingredients
1.5 cup cooked & shredded chicken breast
1 cup low fat mozzarella cheese
1/2 cup softened, low fat cream cheese
1/2 cup Plain, Low Fat Greek yogurt
1 4 oz can of green chilies
2 TBSP diced jalapeños 
1 tsp cumin
1 tsp chili powder
1/4 tsp salt
1/2 tsp garlic powder
4 corn tortillas (whole wheat preferred)

Directions
1) Preheat oven to 425 degrees. Spray a medium baking dish with cooking spray. 
2) In a medium bowl, mix together chicken, mozarella cheese, cream cheese, yogurt, green chilies, jalapeños, and seasonings. Mix until everything is combined well.
3) Layer 2 corn tortillas on the bottom o the baking dish (1 whole in the middle, 1/2 on each side to ensure whole dish is covered)
4) Follow the corn tortilla layer with half to the chicken mixture using a spoon or spatula to speak it out evenly.
5)Top chicken mixture with another layer of corn tortilla. Follow that with other half of chicken mixture & 2 tbsp low fat shredded cheese on top.
6) Cover and bake in preheated oven for 20 minutes or until cheese is golden & melted.

  1. you don't list cottage cheese in your ingredients but its in the directions?? How much?? Also, how does this break down for the 21 day fix?

  5. Not sure if it was just me, but this recipe did NOT make enough for a dish like the one in the picture. It hardly had enough to fit in a 8x8 pan. We'll probably only end up with about 4 servings. The tortillas in the photo also look like flour tortillas. Was there a mistype there maybe?

  6. 21 Day Fix doesn't use the LF versions of things because of the way it has to be processed vs. being natural - I thought. Granted, I am new to the program, but I am pretty sure that is one of the first things I was told.

  8. From the ingredient list, it looks like it would be 1.5 red, 2 blue, and 2 yellow. I dont remember regular cream cheese being ok...but if it is, that would be more blue. IDK about yall but i am allotted 1blue a day. I feel there would be a healthier alternative.

  10. if you divide the blues into the recipe that it equals ABOUT 1 one blue. No recipe will ever really be "exact" because the portions will always be varying

    Greek yogurt is a good alternative

  11. You can cut out a bunch of unnecessary calories by substituting the Greek yogurt and cream cheese with a can of cream of mushroom/chicken soup.

  12. By doing the can of cream of ____ soup (unless there is an all natural) you end up with the preservatives and processed stuff that you are trying to avoid as well as the additional things like extra salt and sugars.
